    Cranberry Walnut Breakfast Muffins Ingredients: 2 1/4 cups almond flour 2 tsp baking powder 1 tsp cinnamon 1/4 tsp salt 1/4 cup coconut oil 1/4 cup almond milk 2 flax eggs 1/4 cup maple syrup 1 tsp vanilla extract 1/2 cup rolled oats 1 cup cranberries 1/2 cup walnuts, chopped Instructions: Preheat oven to 350° F and line muffin pan with liners Sift together almond flour, baking powder, cinnamon and salt Stir in oil, milk, flax eggs, maple syrup and vanilla extract Fold in oats, cranberries and walnuts Fill the muffin cups with the batter and sprinkle with more oats and walnuts Bake about 22-25 min, until centers are set and a toothpick comes out clean Let cool in pan about 10 minutes Enjoy!

    Tabbouleh Recipe - Ingredients: 1/2 cup bulgur 1 cup hot water 3 cups finely chopped parsley 1/2 cup finely chopped mint 1 cup diced tomatoes 1 cup diced cucumber 1 cup diced red onion Juice from 1 lemon 3 tbsp olive oil Salt & pepper, to taste Instructions: Soak the bulgur in hot water about 20 minutes Mix together the parsley, mint, tomatoes, cucumber, onion and bulgur Dress with lemon juice and olive oil Season with salt and pepper Enjoy!

    Slow Cooker Pasta e Fagioli - Ingredients: 1lb Italian sausage, cooked and crumbled 15 oz can kidney beans, drained 15 oz can cannellini beans, drained 1 cup diced onion 1 cup diced carrots 1 cup diced celery 4 cloves garlic, minced 15 oz diced tomatoes 8 oz tomato sauce 1 TB Italian seasoning 1/2 tsp crushed red pepper 2 tsp salt 1 tsp pepper 4 cups chicken stock 1 cup pasta, small shells or ditalini Toppings-Parmesan Parsley, chopped Instructions: Add cooked sausage, beans, onions, carrots, celery, garlic, tomatoes, tomato sauce, seasonings and stock to the slow cooker Stir to combine Cover and cook on high 3 hours Stir in pasta Cover and cook 30 minutes Top with Parmesan and parsley Enjoy!

    Easy Potato Soup - Ingredients: 7 slices bacon, cut into small pieces 3 TB bacon grease 1 cup chopped onion 1 cup chopped celery 4 cloves garlic, minced 1/4 cup flour 4 cups chicken stock 2 cups milk 2 lbs potatoes, peeled and diced Salt & pepper to taste 1 tsp fiesta seasoning, taco seasoning 1/2 cup sour cream 1 cup shredded cheddar cheese Instructions: Cook bacon until crispy Remove from pot and set aside, leaving about 3-4 TB of bacon grease in pot Add onion, celery and garlic and cook until fragrant Stir in flour Add stock, milk and potatoes Stir in salt, pepper and seasoning Bring to a simmer, cover and cook 20 minutes until potatoes are tender Add sour cream, cheese and crispy bacon Mash some of the potatoes to create a thicker soup Top with cheese, bacon pieces and green onions Enjoy!

    Smoked Sausage & Mushroom Rice - Ingredients: 2 TB butter 8 oz mushrooms, cleaned and sliced 1 cup diced onion 2 garlic cloves, chopped 14 oz smoked sausage, sliced 1 cup long grain rice 1 3/4 cups beef broth 1/4 cup chopped parsley Instructions: Melt butter in pan over med-high heat Add mushrooms and cook about 5 minutes Stir in onion and garlic and cook about a minute until fragrant Add sausage, rice and broth Stir to combine and bring to a simmer Cover and simmer 15 minutes, until liquid is absorbed Remove from heat and let sit 10 minutes Add parsley and toss together Enjoy!
