Soft Potato Buns
Ingredients:
1/2cup water
1/4cup whole milk
2 1/4tsp active dry yeast
3tbsp sugar, divided
4tbsp butter, melted
1cup mashed potatoes, room temp
1 egg
1 egg yolk
1 1/2tsp salt
4cups flour
Egg wash
1 egg
1 tsp water
Instructions:
Heat water and milk to 105–110°F
Stir yeast into warmliquid with 1tsp sugar, let sit until foamy, 5-10min
Add remaining sugar, butter, mashedpotatoes, egg, yolk, salt, about half the flour
Mix until combined
Add remaining flour until stickydough starts to form
Continue mixing on low until dough is smooth,about 5min
Place dough in lightly oiled bowl, turning over to coat surface with thin layer of oil
Cover and let rise 1-2hours, until doubled in size
Gently deflate,place on lightly floured surface
Divide into ten pieces, shape into balls
Place on baking sheet,cover and let rise about30min
Preheatoven 375°F
Brush dough with eggwash,bake 12min, until bakedthrough and goldenbrown
