Mini Blueberry Pie Recipe - Ingredients: 3 six-inch unbaked pie shells Topping- 1/2 cup old fashioned oats 1/3 cup brown sugar 1/4 cup flour 1/4 tsp cinnamon 1/4 cup cold butter, cubed Filling- 3 cups blueberries, fresh or frozen 1/4 cup brown sugar 1/4 cup flour 1 tbsp cornstarch 1 tbsp lemon juice Zest from one lemon Instructions: Preheat the oven to 350°F Topping- Stir together oats, sugar, flour and cinnamon Add butter and cut into dry ingredients, until crumbly Set aside Filling- Combine blueberries, sugar, flour, cornstarch, lemon juice and zest Divide the filling between the 3 pie shells Top evenly with crumble topping Bake 25-30 minutes, until filling is bubbly and topping is golden Cool Enjoy!
