Easy Dublin Coddle Recipe Ingredients: 1/2 lb bacon 1 lb pork sausage - Irish sausage, if available 3 lbs potatoes, sliced 2 yellow onions, sliced 1 1/2 cups chicken stock Salt and pepper 1/4 cup chopped fresh parsley Instructions: Heat pot over med heat Cut bacon into pieces, add to pot and cook slightly, remove and set aside Add the sausages and brown Remove sausages and slice each into 3-4 pieces Layer ingredients in pot starting with potatoes, onions, bacon and sausage, repeat layers ending with potatoes Pour chicken broth over top Season with salt and pepper Cover and simmer 1 1/2-2 hours Serve sprinkled with parsley Enjoy!
