❤️No Bake Chocolate Raspberry Freezer Brownies❤️ ❤️First Layer 1/2 cup chopped walnuts 1/2 cup chopped almonds 1/4 cup cacao powder 2 tsp. shredded coconut (optional) 1 cup pitted, pre-soaked medjool dates Blend in a food processor, press into 8x8 Pyrex dish lined with parchment paper ❤️Second Layer In a bowl combine; 1/2 cup almond butter 1/3 cup maple syrup 1/3 cup coconut oil 1/2 cup freeze dried raspberries 1/2 cup fresh raspberries Be sure to mash the raspberries well to get the red color! Then add to the first layer. Let it sit in the refrigerator for one hour. ❤️Top Layer 1.5 cups of chocolate chips (any kind you prefer!) Melt these in a double boiler or pyrex dish. Layer on top and leave in the refrigerator overnight.

Saturday morning, February 1st…the actual New Year. Am I right? 🤷🏻‍♀️ It’s been chilly and I was in the mood for something cozy, so I made oatmeal and and added homemade almond milk from the nutrmachine-an alternative milk creator, chia seeds, sliced banana and cinnamon. I used two medjool dates to add the perfect amount of sweetness to the almond milk and therefore the entire oatmeal dish. Perfect start to my birthday month…!! If you haven’t played around with Ruby chocolate, you should! First introduced in 2017, ruby chocolate is a pink-hued chocolate crafted by Switzerland’s Barry Callebaut. This is a unique type of chocolate made with under-fermented cocoa beans. These beans are treated with citric acid to give them their pink color. Ruby chocolate has a slightly fruity flavor profile, and a milder taste similar to white chocolate. It’s 100% real chocolate and does not contain any artificial flavors or pink coloring. You can find this chocolate online or at select grocers depending on where you live. I found mine at Whole Foods Market, where @chocolove has the product available for $2.99 a bar.

If you love chocolate and dates, this recipe is a must. All you need is ❤️1 bag of semi-sweet chocolate chips ❤️12 oz. Medjool dates ❤️ Fun colorful sprinkles (optional) Boil your dates in hot water for 10 minutes. Then puree them. Melt a bag of chocolate chips with 2-3 tablespoons of coconut oil (hardens better this way!) and add one layer to your mold. Let it freeze 15 minutes. Then add a tablespoon (or slightly less) of your puréed dates, then another layer of chocolate and while it’s still warm, the sprinkles. Put back in the freezer for 30 minutes and enjoy as a delicious, nutrient dense sweet treat!👩🏻‍🍳❤️
