    The I can do this dish - Hummus Chicken 1 package chicken thin sliced or butterflied lengthwise 2 zucchini 1 large or 2 small yellow squash 1 container hummus Olive oil salt pepper paprika Slice the zucchini and squash into quarter inch rings and lay flat across the bottom of the baking dish Drizzle with olive oil and seasoned with salt and pepper Lay the chicken flat across the veggies Smear the container of hummus across the top of the chicken Top with a little paprika for color Bake at 375 40 minutes depending on thickness of chicken Serve with a side of rice or quinoa ENJOY I promise you ve got this and it will be one of your go to dinners It tastes great leftover can be made ahead of time and always comes out great Don t forget to save and let me know if you give

    When the weather cools down I m not always in the mood for a typical salad so made this cozy roasted Brussels sprouts and butternut squash salad with turkey bacon and a delicious tahini dressing It s packed with protein fiber and healthy fats plus tons of flavor and texture perfect for fall The video show you how it all comes together but see below for the full recipe Roasted Brussels Sprouts Butternut Squash Salad with Tahini Vinaigrette 4 -6 strips bacon I used turkey bacon here but regular would be divine 1 bag shaved Brussels sprouts 1 package p r e -cut butternut squash 1 2 cup pecans craisins optional handful Pepita seeds a generous amount of shredded Parmesan cheese salt pepper garlic powder olive oil For the dressing 1 4 c olive oil 1 4 c apple cider vinegar 2 tbsp tahini drizzle Dijon mustard drizzle maple syrup
