RECIPE: • 3 lbs chicken thigh (pork shoulder also works great) • 2 cups Sprite (citrus soda) • ½ cup soy sauce • ½ cup calamansi juice (or lemon) • 1 ½ banana ketchup (or tomato ketchup, but banana is the way) • 2 Tbsp. garlic powder • 2 Tbsp. black pepper • 2 tsp salt • 1/3 cup brown sugar • Marinade meat for at least 1 hour. Drain meat, and save the marinade for basting. Boil the marinade adding corn starch to thicken, then use to coat chicken as it grills.

Pork Chop Bistek Recipe. Bistek is a loose translation of Beef Steak which is traditionally the cut of meat used for this dish But I used pork chops: ▪ 4 large pork chops seasoned with SPG, marinaded in Bistek sauce for at least 30 minutes. Slice slits along the edge to prevent curling. ▪ Bistek sauce ½ cup soy sauce, ½ large lemon juiced, 1 tsp each of garlic, black pepper, chicken bouillon, patis, sugar, corn starch all mixed well. ▪ 1 large onion sliced into rings and 2 small potatoes sliced thinly ▪ Sear both sides of marinated pork chops over high heat, add remaining marinade, cover and braise for at least 30-minutes. ▪ Fry potatoes crispy while chops braise. ▪ Final 5 minutes, add onion rings until softened.
