Bacon Spinach Artichoke Dip! 🤤 Cheese mixture: In a bowl, mix together 1 block of softened cream cheese, 1/4 cup of sour cream, 1/4 cup of mayonnaise, 1/4 cup of shredded or shaved Parmesan cheese, 1/4 cup of mozzarella cheese. Bacon, Spinach, Artichoke mixture: in a pan, sauté 2-3 slices of chopped bacon. When about 75% done, add 1/4 cup of diced onion or challots and sauté until tender. Add 2-3 chopped cloves of garlic and sauté about 2 mins. Add a bag of fresh spinach, and the drained artichokes. The juice from the artichokes will create steam needed for the spinach to wilt. Remove from heat. Combine the cheese mixture with the bacon, spinach, and artichoke mixture and add to an oven safe dish. Top with cheese then bake at 375°F for 18 minutes. Serve with crackers or crusty baguette.

Roasted Pepper and Cauliflower Soup. This is my wife’s favorite soup! Roast cauliflower (2 heads), peppers, onions, and garlic at 375°F (190°C) for about an hour. Transfer to a stock pot and cover with chicken broth. Boil for 15 minutes, blend, and add 1/2 cup of heavy whipping cream. Serve topped with Parmesan cheese and crusty bread or croutons.

Enjoy! 1 cup mayonnaise 1 cup buttermilk 1/4 tsp paprika 1/2 tsp pepper 1/2 tsp salt 1/2 tsp parsley 1/2 tsp garlic powder 1/2 tsp onion powder 1/2 TBS dill Optional: Juice of half lemon and/or 1/2 tsp chives Keep refrigerated. Shelf life is the same as the buttermilk.
