Puerto Rican Caldo de Pollo (Chicken Soup)
Ingredients: 6 chicken pieces (thighs, legs, wings, or breast chunks), 2 tsp garlic powder, 1 tsp oregano, 1 tsp paprika, 2 tsp adobo, Salt & pepper, 1 tbsp olive oil, 4 tbsp sofrito, 1 large onion diced, 2 -3 bay leaves, 2 packets Sazon, 4 carrots chopped, 8 cups chicken broth, 1 -2 bundles cilantro chopped, 4 corn cobettes halved, 3 cups potatoes chopped, 2 cups pasta
Instructions: 1. Season chicken with spices adobo and olive oil. Set aside breasts, & added later. 2. Prep veggies. 3. Heat oil in a pot, add sofrito and cook 2 minutes. 4. Add onion, bay leaves, and Sazon. Stir 1 minute. 5. Add bone-in chicken and carrots. Cook 3 minutes. 6. Add broth, cilantro, corn, potatoes, S&P. Cover and simmer 25 minutes. 7. Add pasta and chicken breasts. Cook 15 minutes. 8. Serve!
