NO-BAKE CARROT CAKE BARS 🥕 #emilyxlevi #recipes #healthy #snacks #dessert 🥕Base: 1 1/2 cup dates 1 cup cashews 1/2 cup rolled oats 1/2 cup grated carrots 2 tbsp maple syrup 1 tsp vanilla 1 tbsp flax seed 1/4 tsp ginger and nutmeg 1/4 cup pecans ✨Icing: 1 cup cashews (soaked for about 30 minutes) 3 tbsp maple syrup 1 tsp apple cider vinegar 2 tbsp coconut oil 1/4 cup coconut cream 1 tsp vanilla Pinch of sea salt In a blender, combine all ingredients for the base and blend until smooth. Press into a pan lined with parchment paper. Next, combine all the ingredients for the icing and blend. Smooth over the top of three base, and place in the fridge for 30–45 minutes to set. Enjoy! 🧡
