1/4 cup coconut oil (oil of choice) 1/2 cup light brown sugar 1/2 cup granulated sugar 1/4 cup almond milk (milk of choice)
1 tsp vanilla extract 1 3/4 cups AP or GF flour
1 tsp baking soda 1/4 tsp baking powder 1/2 tsp salt 1 cup chopped dark chocolate Your favorite flavor of ice cream Instructions: Preheat oven to oven to 350°F and oil a muffin pan, set aside Beat the nut butter, oil and sugars until creamy Mix in the milk and vanilla Add flour, baking soda, baking powder and salt and mix to combine Fold in the chocolate Scoop the dough into the 12 muffin cups Bake 12-14 minutes, until puffed and edges start to brown Cool slightly then remove from pan and cool on rack Top with scoops of your favorite ice cream Enjoy!
