Cranberry Walnut Breakfast Muffins Ingredients: 2 1/4 cups almond flour 2 tsp baking powder 1 tsp cinnamon 1/4 tsp salt 1/4 cup coconut oil 1/4 cup almond milk 2 flax eggs 1/4 cup maple syrup 1 tsp vanilla extract 1/2 cup rolled oats 1 cup cranberries 1/2 cup walnuts, chopped Instructions: Preheat oven to 350° F and line muffin pan with liners Sift together almond flour, baking powder, cinnamon and salt Stir in oil, milk, flax eggs, maple syrup and vanilla extract Fold in oats, cranberries and walnuts Fill the muffin cups with the batter and sprinkle with more oats and walnuts Bake about 22-25 min, until centers are set and a toothpick comes out clean Let cool in pan about 10 minutes Enjoy!
