Smoked Sausage & Mushroom Rice - Ingredients: 2 TB butter 8 oz mushrooms, cleaned and sliced 1 cup diced onion 2 garlic cloves, chopped 14 oz smoked sausage, sliced 1 cup long grain rice 1 3/4 cups beef broth 1/4 cup chopped parsley Instructions: Melt butter in pan over med-high heat Add mushrooms and cook about 5 minutes Stir in onion and garlic and cook about a minute until fragrant Add sausage, rice and broth Stir to combine and bring to a simmer Cover and simmer 15 minutes, until liquid is absorbed Remove from heat and let sit 10 minutes Add parsley and toss together Enjoy!
