Ingredients: 6 TB butter 1/2 large onion, chopped 2 medium carrots, sliced 1 large rib celery, diced 4 cloves garlic, minced 1 tsp dried sage 1/2 tsp pepper 1/2 tsp cayenne pepper 1/3 cup flour 6 cups chicken broth 2 cups cubed ham 2 cups cooked rice 2 cups spinach 1/2 cup milk, room temp Salt, to taste Parsley for garnish Instructions: Melt butter over medium heat Add onion, carrots and celery Cook until onion is translucent Add garlic, sage, pepper and cayenne, cook and stir about 30 seconds Add flour, cook and stir 2-3 minutes Stir in the chicken broth and bring to a simmer Add ham, lower heat, cover and simmer 15 minutes Stir in rice and spinach, cook 5 minutes to heat rice through and wilt spinach Remove from heat, stir in milk and salt if needed Sprinkle with parsley Enjoy!
