Carrot Loaf Cake Recipe! Ingredients: 2 cups flour 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 2 tsp cinnamon 1 tsp nutmeg 3/4 cup brown sugar 1/2 cup milk of choice 2 flax eggs 1/2 cup oil 2 tsp vanilla extract 1 TB apple cider vinegar 2 cups shredded carrots 1/2 cup chopped walnuts Instructions: Preheat oven to 350° F Prepare loaf pan with parchment paper Whisk together flour, baking powder, baking soda, salt, cinnamon and nutmeg Mix in brown sugar, milk, flax eggs, oil, vanilla and apple cider vinegar Fold in shredded carrots and walnuts Pour batter into loaf pan Bake 55-60 minutes, until toothpick comes out clean Cool in pan Enjoy!
