Beef & Barley Soup Ingredients: 1 lb beef stew meat, cubed 1 onion, chopped 2 carrots, diced 2 celery stalks, chopped 3 cloves garlic, minced 6 cups beef broth 1 can diced tomatoes (optional) 1 tsp salt 1/2 tsp black pepper 1 tsp dried thyme 1 tsp dried oregano 3/4 cup pearl barley Instructions: In a large pot, heat 1 top oil over medium heat. Brown beef cubes until golden, then remove. In the same pot, sauté onion, carrots, celery, and garlic for 5 minutes. Add beef broth, tomatoes, beef, salt, pepper, thyme, and oregano. Bring to a boil. Stir in barley, reduce heat, and simmer for 45-50 minutes until barley is tender. Taste and adjust seasoning. Serve hot!
