This pickled cabbage is delicious on burgers, tacos, or by itself! Ingredients: 1 head cabbage 3 carrots 2 cups water 2.5 cups white vinegar 2 tbsp pickling salt Directions: Wash and shred cabbage. Rub salt into cabbage and let sit for at least 2 hours. Rinse salt off cabbage. Shred carrots. In pot, bring water and vinegar to a boil. Stir in cabbage and carrots. Heat for 1 minute. Pack hot veggies then hot brine over top into hot jars, leaving 1/2" headspace. Debubble and clean rim of jar. Process for 15 minutes. Turn off heat and remove lid for 5 minutes.
