Here’s how to make it: Slice 6 Persian or mini cucumbers and add to a large jar or bowl. Cube 1 avocado and add it. Thinly slice 1 scallion (white and green parts). Finely chop 1/3 cup each of fresh dill and mint. Add 2 oz toasted walnuts, 1.5 oz feta cheese, and 2 tbsp sumac. Dress with zest and juice of 1/2 lemon, 3-4 tbsp good olive oil, salt, and pepper.
