    Tuna Cucumber Boats For a quick, protein-packed meal, try this spicy tuna salad with 51g protein and just 500 calories! Scoop it into hollowed English cucumbers or any vessel you prefer. Ingredients: - 2 cans (7oz total) tuna in water - 2 medium boiled eggs - 1/2 jalapeño, diced (deseeded for less heat) - 1/4 cup dill pickles, diced - 1/2 small red onion, soaked in water - 1 tbsp Dijon mustard - 1.5 tbsp mayo - 1 tbsp sriracha or hot sauce - Salt & pepper - 1 English cucumber - 1 tsp sesame seeds & chipotle hot sauce for garnish Instructions: 1. Mix tuna, diced veggies, and boiled eggs in a bowl. 2. Add mustard, mayo, sriracha, salt, and pepper; combine well. 3. Stuff into the cucumber and garnish with sesame seeds and chipotle sauce.
