Baking Banana Bread! This delicious recipe is from simplyrecipes.com: Ingredients: 3 very ripe bananas 1/3 cup butter, melted (I used margarine) 1/2 teaspoon baking soda 1 pinch salt 3/4 cup sugar 1 large egg, beaten 1 teaspoon vanilla extract 1 1/2 cups all-purpose flour 1/2 cup chocolate chips (optional) Instructions: 1. Preheat the oven to 350 degrees Fahrenheit. Oil an 8x4 inch loaf pan. 2. Mash the bananas, and mix melted butter into bananas. 3. Mix in baking soda and salt, then the sugar, beaten egg and vanilla extract, and then the flour. Mix in chocolate chips (optional). 4. Pour the batter into the loaf pan. 5. Bake for 55-65 minutes at 350 degrees, or until a toothpick in the middle comes out clean. Good at room temperature for 4 days, good when refrigerated for 5 days, or freeze. 6. Enjoy!
