Creamy Butternut Squash Soup 🍲 Ingredients: • 1 medium butternut squash, peeled, cubed • 1 small onion, diced • 2 garlic cloves, minced • 1 carrot & 1 apple, chopped (optional) • 4 cups vegetable broth • 1 cup coconut milk (or heavy cream) • 2 tbsp olive oil or butter • ½ tsp cinnamon, ½ tsp nutmeg, salt & pepper • Garnish: Pumpkin seeds, thyme, or coconut milk Instructions: 1. Heat oil in a pot, sauté onion, garlic, and carrot until soft. 2. Add squash, apple, and spices; stir. 3. Pour in broth, bring to a boil, then simmer for 20–25 minutes. 4.
