Aromatic Leek Stew with Carrots and Rice This easy-to-make, flavorful stew is perfect for cold days or as a light, healthy meal. Ingredients: • Olive oil • 2–3 medium leeks (cleaned and sliced) • 1–2 carrots (sliced) • 2 tbsp rice • 1 tsp tomato paste • 1 small onion (chopped) • 2 cups water (400 ml) • 1 tsp salt • Pepper to taste • Juice of half a lemon • 1 tsp chili (optional) Instructions: Sauté: Heat olive oil in a pot.
