Crispy Fried Chili Fish: INGREDIENTS: - Whole tilapia (cleaned & gutted) - 1 quart of oil - 7 cloves of garlic - Thai chili & jalapeños as desired - 3 cubes of palm sugar - 2 tsp of fish sauce - 1.5 tsp of oyster sauce - 1.5 tsp of soy sauce - Dash of dark soy sauce - Dash of black pepper - Dash of msg - Dash of tamarind powder - OPTIONAL Cornstarch slurry (water & cornstarch) 1. Score fish in both sides, pat complete dry. Place in the the fridge to dry out for a minimum of 2hrs 2. Fry on medium high heat until golden 3. Mash garlic, chili peppers and jalapeños 4. To a pan on medium heat, add oil, palm sugar and the rest of the ingredients. Top over fried fish, enjoy with fresh vegetables as a wrap 🤤
