These simple pancake muffins make the work week mornings a little better Ingredients -pancake mix (I love Kodiak) milk (any kind, I used coconut) -egg (for extra protein) -sprinkle of cinnamon (optional) -splash of vanilla extract (optional) -your favorite toppings (bananas, chocolate chips, blueberries, etc) 1️⃣ Line a muffin tin with liners or cooking spray and preheat oven to 350 degrees. 2️⃣ Make pancake mix and pour into muffins tin. 3️⃣ Place favorite toppings on top of batter 4️⃣ Bake at 350 degrees for 20-22 minutes 5️⃣ Let cool and store in airtight container for 3-4 days and reheat in microwave or toaster oven when ready to eat.
