Mandarin Possets ππ« RECIPE (makes 12) 2 cups heavy cream 1/2 cup sugar Pinch salt 4 tsp mandarin zest 6 tbsp mandarin juice Prepare the mandarins, scooping out the flesh so you can fill them. Add the cream, sugar, salt, zest to a saucepan over medium heat. Bring to a boil, then reduce heat and simmer for 5-6 mins, stirring often to prevent burning. Strain through a fine mesh sieve and discard the zest. Whisk in the juice. The mixture should thicken slightly. Pour into the mandarin halves and refrigerate for at least 3 hours or overnight, until set. Top with chocolate shavings.
