Vegan Garlic Pasta! Ingredients - 1 bunch asparagus -1 zucchini - 2 cans chickpeas -5 tsp minced garlic -3 Tbsp miso paste -1 box rotini noodles -1 bunch green onion -olive oil -salt -pepper //Directions 1–finely dice green onions and add to pan greased with olive oil Sprinkle with salt //2–chop spears off asparagus and finely chop remaining parts of asparagus discarding woody stems// 3–slice zucchini into thin half moons //4–add garlic and other veggies to the onion. Add more olive oil if needed. //5–boil rotini noodles for 1 min less than package instructions. Set aside 1 -2 cups pasta water. //6–drained 2 cans chickpeas. Add 1 1/4 can to veggie mixture and add 3/4 can to blender.//7–add miso paste and 1 -2 cups pasta water to blender. Blend to make sauce.// 8–add noodles to sauteed veggies. 9–pour sauce over mixture and serve!
