This weeks “Soup Sunday”: sausage and gnocchi soup Ingredients: Onion Celery stalks 2 handfuls Fresh spinach 1lb ground sausage Olive oil Garlic Italian seasoning Red pepper flakes (can opt out for less spice) Parmesan or pecorino Romano cheese I tbsp flour 3 tbsp tomato paste 8oz tomato sauce 6 cups chicken broth 16 oz gnocchi Directions: Brown sausage until no longer pink Add onions, garlic, celery and seasonings. Sauté Mix in flour, tomato paste and sauce, cheese and chicken broth. Bring to boil Lower heat and simmer for 12-15 minutes Add gnocchi and cook for 3-4 minutes Toss in spinach and simmer for another 2 minutes Enjoy 😊 #soupsunday #soupseason
